Ingredients

→ Burger Patties

  • 01 2 pounds 80/20 ground chuck
  • 02 1 tablespoon salt
  • 03 1 tablespoon black pepper
  • 04 1 tablespoon garlic powder

→ Bacon Jam

  • 05 1 pound bacon, chopped
  • 06 1 white onion, diced
  • 07 4 garlic cloves, minced
  • 08 1/2 cup brown sugar
  • 09 1/4 cup bourbon
  • 10 1/4 cup apple cider vinegar
  • 11 1/2 cup maple syrup

  • 12 6-9 slices American cheese
  • 13 Slider buns
  • 14 Wagyu tallow or cooking spray

Steps

Step 01

Flatten the ground chuck in a pan, season evenly with salt, pepper, and garlic powder, and refrigerate.

Step 02

In a skillet, cook the chopped bacon until crispy. Remove the bacon from the skillet and discard half of the grease.

Step 03

To the remaining skillet grease, add the diced onion and cook for 10 minutes on medium heat. Then, add the minced garlic and cook for an additional 4-5 minutes.

Step 04

Return the cooked bacon to the skillet and cook for 1-2 minutes. Add brown sugar, bourbon, apple cider vinegar, and maple syrup. Simmer the mixture for 10-15 minutes until thickened. Transfer the bacon jam to a jar and set aside.

Step 05

Preheat the griddle to medium heat and spray lightly with Wagyu tallow or cooking spray. Place the prepared patties on the griddle and season the backside. Cook for 4-6 minutes, flip, and place a slice of American cheese on top after 2 minutes.

Step 06

Lightly toast the slider buns on the griddle until golden brown.

Step 07

Assemble the sliders by layering each toasted bun with a patty and a generous portion of bacon jam. Optionally, cut the sliders in half and serve.

Tips

  • For a smokier flavor, use smoked bacon and smoked maple syrup.
