Step-by-Step Instructions

Prepare the Avocado:
Slice the avocado in half twisting to separate remove the seed with a spoon then scoop the flesh into a bowl or food processor for the smoothest mash

Blend the Filling:
Add coriander leaves roughly chopped green chilli lime juice and a small pinch of salt process everything until the mixture is smooth and spreadable taste and adjust salt or lime as needed for flavor

Assemble the Sandwiches:
Lay out bread slices place one slice of cheese on each piece then spread a generous layer of avocado mixture on top line up another cheese slice over the avocado and close each sandwich with a second bread slice

Toast the Sandwiches:
Heat a heavy pan such as cast iron over medium low spread a thin layer of butter on the pan and lay in a sandwich cover and let cook for about five minutes until the bottom is golden resist lifting too soon as the slow heat melts the cheese and crisps the bread

Flip and Finish:
Gently flip the sandwich using a flat spatula add a little more butter to the pan for even browning press gently and cook the second side until deeply golden and crisp another four to six minutes

Slice and Serve:
Transfer sandwiches to a cutting board allow to cool just briefly then slice carefully with a serrated knife to keep the creamy stuffing from spilling out serve warm
