  • 1½ cups (360 ml) water
  • 3 large egg yolks
  • 2 tablespoons (28 g / 1 oz) unsalted butter
  • ½ cup (120 ml) fresh lemon juice (about 2–3 lemons)
  • 1 tablespoon (6 g) lemon zest

For the Meringue

  • 3 large egg whites
  • ¼ teaspoon cream of tartar (optional)
  • ½ cup (100 g / 3.5 oz) granulated sugar
  • ½ teaspoon vanilla extract
