Ingredients

For the Beef Stifado:

• 900 g beef chuck, cut into large cubes (2 lb)
• 450 g pearl onions, peeled (1 lb)
• 3 tablespoons olive oil (45 ml)
• 3 cloves garlic, minced
• 1 tablespoon tomato paste (15 g)
• 400 g crushed tomatoes (14 oz / about 1¾ cups)
• 250 ml beef broth or water (1 cup)
• 120 ml red wine (½ cup)
• 2 tablespoons red wine vinegar (30 ml)
• 2 bay leaves
• 1 cinnamon stick
• 4 whole cloves
• 1 teaspoon dried oregano (5 g)
• 1 teaspoon sugar (5 g, optional)
• Salt and black pepper, to taste

Optional Garnish:

• Fresh parsley, finely chopped
