Ingredients
- 2 lbs (900 g) beef chuck or brisket, cut into large chunks
- 4 dried guajillo chilies, stems and seeds removed
- 2 dried ancho chilies, stems and seeds removed
- 2 dried pasilla chilies, stems and seeds removed
- 4 tomatoes, roasted or boiled
- 1 medium onion, chopped
- 4 cloves garlic
- 2 cups (480 ml) beef broth
- 2 tablespoons apple cider vinegar
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cloves
- 1/2 teaspoon black pepper
- Salt, to taste
- 2 bay leaves
- Fresh cilantro, chopped, for garnish
- Lime wedges, for serving
- Corn tortillas or rice, for serving
