- 2 slices white bread, crust removed
- 1/3 cup (80 ml) whole milk
- 1 1/2 lb (680 g) lean ground beef
- 2 large eggs, lightly beaten
- 4 cloves garlic, finely chopped
- 1/4 cup (10 g) Italian flat-leaf parsley, finely chopped
- 2 teaspoons finely chopped fresh oregano
- 1/2 cup (50 g) finely grated parmesan cheese, plus extra for serving
- 1/3 cup (50 g) dried currants
- 1/4 cup (30 g) pine nuts
- 1/4 cup (25 g) Italian-style breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup (60 ml) extra virgin olive oil (for frying)
Sauce
- 1/4 cup (60 ml) extra virgin olive oil
- 3 cloves garlic, thinly sliced
- 1 (28 oz / 796 g) can crushed tomatoes
- 1 (15 oz / 425 g) can tomato sauce
- 1/2 teaspoon salt
