Ingredients

Soup Base:

  • • 1 lb (450 g) ground beef
  • • 1 medium onion, diced
  • • 2 cloves garlic, minced
  • • 1 (15 oz / 425 g) can black beans, drained and rinsed
  • • 1 (15 oz / 425 g) can pinto beans, drained and rinsed
  • • 1 (15 oz / 425 g) can corn, drained
  • • 1 (14.5 oz / 410 g) can diced tomatoes, undrained
  • • 1 (10 oz / 283 g) can diced tomatoes with green chilies
  • • 4 cups (960 ml) beef broth
  • • 2 tsp chili powder
  • • 1 tsp cumin
  • • 1 tsp smoked paprika
  • • 1/2 tsp salt
  • • 1/4 tsp black pepper

Creamy Finish:

  • • 1/2 cup (120 ml) heavy cream
  • • 1/2 cup (50 g) shredded cheddar cheese
  • • Optional toppings: sour cream, diced avocado, tortilla chips, chopped cilantro
