Chicken Cheese Bake

Introduction

This Chicken Cheese Bake is a decadent, creamy dish perfect for a hearty dinner. Loaded with tender rotisserie chicken, crispy bacon, sautéed mushrooms and onions, and a blend of cheeses, it’s a comfort-food masterpiece. The creamy sauce has a slight kick from hot sauce and a perfect depth of flavor from mustard and spices. Baked until bubbly and golden on top, this dish is sure to become a family favorite.

Ingredients

Cheese Sauce & Bacon:

  • • 1 pound (450 g) bacon
  • • 8 oz (225 g) cream cheese
  • • 1/2 cup (50 g) grated Parmesan cheese
  • • 1 1/2 cups (150 g) sharp cheddar cheese, shredded
  • • 1/3 cup (80 g) avocado mayonnaise
  • • 1 cup (240 ml) heavy cream
  • • 1/2 teaspoon hot sauce (we used Cholula)
  • • 1 teaspoon dry mustard
  • • 1/2 teaspoon white pepper
  • • 1/2 teaspoon garlic powder
  • • 1/2 teaspoon onion powder
  • • 1/2 teaspoon paprika

Vegetables & Chicken:

  • • 1 store-bought cooked rotisserie chicken, meat removed and chopped into bite-sized pieces
  • • 1 1/2 cups red onion, diced
  • • 8 oz (225 g) baby bella mushrooms, sliced
  • • 1 tablespoon fresh garlic, minced
  • • 8 oz (225 g) baby spinach

Topping:

  • • 2 cups (200 g) mozzarella cheese, shredded
