Ingredients

Meatloaf Base

  • • Ground beef: 450 g (1 lb)
  • • Ground pork: 225 g (½ lb)
  • • Breadcrumbs: 60 g (1 cup)
  • • Milk: 120 ml (½ cup)
  • • Grated Parmesan cheese: 50 g (½ cup / 1.8 oz)
  • • Large eggs: 2
  • • Worcestershire sauce: 15 ml (1 tablespoon)
  • • Ketchup (inside meatloaf): 15 ml (1 tablespoon)
  • • Garlic powder: 1 teaspoon
  • • Dried thyme: 1 teaspoon
  • • Salt: ½ teaspoon
  • • Black pepper: ½ teaspoon

Vegetables & Add-Ins

  • • Onion, finely chopped: 75 g (½ cup)
  • • Mushrooms, finely chopped: 70 g (1 cup)
  • • Bacon, cooked and crumbled: 4 slices
  • • Swiss cheese, shredded: 100 g (1 cup / 3.5 oz)

Topping

  • • Ketchup: 120 ml (½ cup)

Directions

  1. Preheat your oven to 190°C (375°F). Lightly grease a loaf pan or line a baking sheet with parchment paper for easy cleanup.
  2. Cook the bacon in a skillet over medium heat until crispy and golden. Transfer to a paper towel, then crumble once cooled.
  3. In the same skillet, sauté the chopped onions and mushrooms over medium heat. Cook for 5–7 minutes until the onions are soft and translucent and the mushrooms release their moisture and turn lightly golden. Remove from heat and allow to cool slightly.
  4. In a large mixing bowl, combine the ground beef and ground pork. Add the breadcrumbs and milk, gently stirring to let the breadcrumbs absorb the liquid for a moist texture.
  5. Add the Parmesan cheese, cooked bacon, shredded Swiss cheese, sautéed onions, and mushrooms to the bowl. The mixture should already smell rich and savory.
  6. Crack in the eggs and add Worcestershire sauce, ketchup, garlic powder, dried thyme, salt, and black pepper.
  7. Using clean hands or a spatula, gently mix everything together until just combined. Avoid overmixing, as this can make the meatloaf dense instead of tender.
  8. Shape the mixture into a loaf and place it into the prepared pan or onto the baking sheet. Smooth the top gently.
  9. Spread the remaining ½ cup of ketchup evenly over the top, creating a glossy, flavorful glaze that will caramelize as it bakes.
  10. Bake uncovered for 60–70 minutes, or until the internal temperature reaches 71°C (160°F). The top should look slightly caramelized and the edges gently browned.
  11. Remove the meatloaf from the oven and let it rest for 10 minutes. This step allows the juices to redistribute, making the slices neat and juicy.
  12. Slice and serve warm.
