  • 2 tbsp unsalted butter (28 g / 1 oz)
  • 6 cloves garlic, finely diced
  • 1 small yellow onion, diced
  • ⅓ cup dry white wine (80 ml / 2.7 fl oz), optional
  • 150 g (5 oz) sun-dried tomato strips, drained of oil
  • 1 ¾ cups half and half (420 ml / 14 fl oz)
  • Salt and pepper, to taste
  • 3 cups baby spinach leaves (90 g / 3 oz)
  • ½ cup freshly grated Parmesan cheese (optional for dairy-free)
  • 1 tsp cornstarch mixed with 1 tbsp water (optional, for thicker sauce)
  • 1 tbsp fresh parsley, chopped
